Curried chicken salad

Experience a burst of flavors in this delectable curried chicken salad. The combination of tender chicken, aromatic curry, and crisp vegetables will tantalize your taste buds.

Ingredients:

  • ¾ cup whole-milk Greek yogurt
  • 3 tablespoons apricot preserves or jam
  • 3 teaspoons curry powder
  • 2 teaspoons Dijon mustard
  • 1 teaspoon grated fresh ginger (from 1 [1-in.] piece)
  • ½ teaspoon turmeric
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 2 cups diced cooked chicken (from 1 whole rotisserie chicken)
  • ½ cup red raisins
  • ½ cup finely chopped red onion (from 1 small onion)
  • ½ cup finely chopped celery (about 2 stalks)
  • Salad greens or lettuce leaves
  • Cracked black pepper, for garnish

Instructions:

  1. Combine yogurt, preserves, curry powder, Dijon mustard, ginger, turmeric, salt, and pepper in a big bowl. Mix until everything is well blended. Then, add chicken, raisins, onion, and celery. Gently mix until everything is well mixed and spread out evenly. 
  2. Cover the bowl and refrigerate for at least 1 hour. Serve over a bed of salad greens or in lettuce cups. Sprinkle cracked pepper on top as a garnish.
