Cucumber vinegar salad
Delight in the refreshing flavors of cucumber paired with tangy vinegar in this zesty salad. Bright, crisp, and perfect for a summer meal.
Ingredients:
- 6 Persian cucumbers
- 2 teaspoons granulated sugar
- ½ teaspoon salt
- 1 cup thinly sliced red onion
- ¼ cup white-wine vinegar
- 2 tablespoons chopped fresh dill
- ¼ teaspoon ground pepper
Instructions:
- Slice the cucumbers thinly, about 1/4 inch thick, using a mandoline or a knife. Place the cucumber slices in a fine-mesh strainer above a large bowl. Sprinkle sugar and salt over the cucumbers and mix well. Allow it to sit at room temperature for 30 minutes.
- Throw away any liquid collected in the bowl and dry it. Put the cucumbers back into the bowl and mix them with onion, vinegar, dill, and pepper. Let it sit at room temperature for 15 minutes. You can serve it right away or store it in the fridge for up to 3 days.
