Cucumber-tomato salad

Ingredients:

  • 1 tablespoon white-wine vinegar
  • 1 teaspoon grated lemon zest
  • 1 tablespoon lemon juice
  • ¾ teaspoon salt
  • 3 tablespoons extra-virgin olive oil
  • 1 English cucumber, cut into 1-inch pieces
  • 450g tomatoes, cut into 1-inch pieces
  • 2 tablespoons chopped shallot
  • 2 tablespoons chopped fresh flat-leaf parsley or basil

Instructions:

  1. In a big bowl, beat together vinegar, grated lemon peel, lemon juice, and salt. Gradually add oil while whisking to mix well. Put in cucumber, tomatoes, and shallot, then mix gently. Allow it to sit at room temperature for a minimum of 1 hour or a maximum of 2 hours before serving. Right before serving, mix in chopped parsley (or basil). Serve using a slotted spoon.
