Cucumber, tomato and red onion salad

Ingredients:

  • 1/4 small red onion, cut into thin slices
  • 1/2 seedless cucumber, cut into 1/3-inch dice
  • 450g vine-ripe or Roma tomatoes, cut into 1/3-inch dice
  • 2 tablespoons freshly squeezed lemon juice
  • 1/4 cup basil-infused olive oil
  • Kosher salt and freshly cracked black pepper

Instructions:

  1. Soak the onion slices in cold water with ice cubes for 15 minutes in a small bowl. Remove the onions from the water and dry them by gently patting them. In a large bowl, mix together the onions, cucumbers, and tomatoes.
  2. Combine lemon juice, olive oil, salt, and pepper in a small bowl by whisking them together. Drizzle the mixture over the salad and serve right away.
