Cucumber starter
Fresh cucumber starter with tangy vinaigrette dressing, bursting with vibrant flavors of herbs and zesty lemon. Perfect for a light and refreshing appetizer.
Ingredients:
- 2 teaspoons red wine vinegar
- 2 teaspoons apple cider vinegar
- 2 teaspoons grapeseed oil
- juice of 1/2 lemon
- salt and pepper to taste
- 2-3 dashes cumin
- 1 medium zucchini
- 1-2 cucumbers
- 1 cup cherry tomatoes, halved
- 2 tablespoons chopped parsley
- 2 tablespoons chopped mint
- 1/4 cup mixed olives, some sliced/whole
- 1/2 cup finely sliced or chopped red onion
Instructions:
- Mix together all the components for the dressing and stir until well combined. Add salt and pepper as necessary for flavor enhancement.
- Optional step: Remove the peel from the cucumber and zucchini if preferred.
- Slice the cucumber(s) vertically, remove seeds, and cut into 1/4 inch slices.
- Slice the zucchini vertically, then cut into 1/4 inch slices.
- Combine the rest of the ingredients with the dressing. Stir well and allow to sit for a minimum of 15 minutes to let the flavors meld.
