Cucumber starter

Fresh cucumber starter with tangy vinaigrette dressing, bursting with vibrant flavors of herbs and zesty lemon. Perfect for a light and refreshing appetizer.

Ingredients:

  • 2 teaspoons red wine vinegar
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons grapeseed oil
  • juice of 1/2 lemon
  • salt and pepper to taste
  • 2-3 dashes cumin
  • 1 medium zucchini
  • 1-2 cucumbers
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons chopped parsley
  • 2 tablespoons chopped mint
  • 1/4 cup mixed olives, some sliced/whole
  • 1/2 cup finely sliced or chopped red onion

Instructions:

  1. Mix together all the components for the dressing and stir until well combined. Add salt and pepper as necessary for flavor enhancement.
  2. Optional step: Remove the peel from the cucumber and zucchini if preferred.
  3. Slice the cucumber(s) vertically, remove seeds, and cut into 1/4 inch slices.
  4. Slice the zucchini vertically, then cut into 1/4 inch slices.
  5. Combine the rest of the ingredients with the dressing. Stir well and allow to sit for a minimum of 15 minutes to let the flavors meld.
