Cucumber sandwich with cotija & lime

Delight in the freshness of cucumber sandwich with zesty cotija cheese and tangy lime dressing. A burst of flavors in every bite!

Ingredients:

  • 2 tablespoons low-fat plain strained yogurt, such as Greek-style
  • 1 ½ tablespoons crumbled cotija cheese
  • 1 tablespoon finely chopped fresh cilantro
  • ½ teaspoon lime zest
  • ⅛ teaspoon ground pepper
  • 1 multigrain sandwich thin, split and lightly toasted
  • ⅓ cup thinly sliced English cucumber
  • ¼ cup arugula or mixed salad greens

Instructions:

  1. Combine yogurt, cotija cheese, cilantro, lime zest, and pepper in a small bowl.
  2. Evenly spread the mixture on both pieces of sandwich thin. Add cucumber slices and arugula (or mixed salad greens) on one piece. Place the other piece on top. Cut the sandwich in half and it's ready to serve.
