Cucumber salad

Ingredients:
- 1 English Cucumber
- 1 tablespoon kosher salt
- 1/4 cup white vinegar (do NOT use cider vinegar)
- 1/8 cup chopped fresh dill
- 1 tablespoon granulated sugar
- 1/4 teaspoon coarsely ground black pepper
- 1 tablespoon fresh lemon juice
- 1 small yellow onion, thinly sliced
- 1 clove garlic, chopped (about 1 tsp.)
Instructions:
- Cut the cucumber into thin slices. Place the slices in a colander and sprinkle salt over them, ensuring each slice gets some salt. Allow them to sit for 15 minutes to let the salt extract moisture from the cucumbers.
- Mix vinegar, dill, sugar, black pepper, and lemon juice in a 1-quart bowl. Set the mixture aside.
- Remove any excess moisture from the cucumber slices that absorbed the salt. Do not wash them. Combine the slices with the vinegar mixture. Add onions and garlic on top; gently mix everything to coat evenly.
- You have completed the dish! Cover it and refrigerate until you are ready to serve, for up to 2 days.
