Cucumber-ribbons caesar salad

Ingredients:
- 2 medium cucumbers, trimmed
- ½ cup halved grape tomatoes
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon lemon juice
- 1 tablespoon mayonnaise
- 1 tablespoon extra-virgin olive oil
- ½ medium clove garlic, grated
- ½ teaspoon anchovy paste
- ¼ teaspoon salt
- ¼ teaspoon ground pepper
- Lemon wedges for serving
Instructions:
- Peel cucumbers, leaving every other stripe of green skin intact. Halve the cucumbers lengthwise and use a spoon to remove the seeds. Thinly slice the cucumbers lengthwise using a wide vegetable peeler or a sharp knife. Wrap the slices in a clean kitchen towel and gently press to remove excess moisture. Transfer the cucumber slices to a medium bowl and add tomatoes.
- In a small jar with a secure lid, mix Parmesan, lemon juice, mayonnaise, oil, garlic, anchovy paste, salt, and pepper.
