Cucumber & celery salad

Ingredients:
- 3 cloves garlic, chopped
- 2 tablespoons lower-sodium soy sauce
- 1 tablespoon toasted sesame oil
- 1 tablespoon rice vinegar
- 2 teaspoons granulated sugar
- 1 teaspoon grated fresh ginger
- ¾ teaspoon gochugaru (optional)
- ¼ teaspoon salt
- 4 Persian cucumbers
- 2 large stalks celery, thinly sliced diagonally (about 1 cup), leaves reserved
Instructions:
- Combine minced garlic, soy sauce, sesame oil, vinegar, sugar, ginger, gochugaru (if desired), and salt in a spacious bowl.
- Lightly crush cucumbers using the flat part of a knife and cut them into thick bite-sized diagonal pieces. Mix in the cucumbers and celery with the sauce; mix well. Allow to sit for 5 minutes.
- Distribute the salad evenly into 6 bowls and decorate with celery tops.
