Cucumber and peach salad with herbs

Indulge in the refreshing flavors of cucumber and sweet peaches in this vibrant salad, perfectly complemented by a sprinkle of fragrant herbs.

Ingredients:

  • shallot, finely chopped
  • Kosher salt
  • lemon
  • Tbsp. Katz’s Sauvignon Blanc vinegar or other white wine vinegar
  • lb. mixed heirloom cucumbers, sliced into ¼"-thick wedges and rounds
  • English hothouse cucumber, halved lengthwise, sliced crosswise
  • Kosher salt
  • lb. yellow peaches, sliced into ¾"-thick wedges
  • oz. mild feta, crumbled
  • Freshly ground black pepper
  • Handful of basil leaves, torn if large
  • Handful of mint leaves, torn if large
  • lemon, halved

Instructions:

  1. In a small bowl, place the shallot and sprinkle a generous amount of salt over it. Use a grater to finely shred the outer layer of the lemon into the bowl. Cut the lemon in half and squeeze out the juice into the bowl. Pour in the vinegar and mix everything together. Allow it to sit for about 10 minutes.In a medium bowl, place the cucumbers and season them with some salt. Drizzle half of the vinaigrette over them and gently mix to ensure they are coated evenly.Arrange the peaches in a serving bowl or on a serving platter and season them with some salt. Drizzle the remaining vinaigrette over them and gently toss by hand until coated.Combine the cucumbers with the peaches, tossing gently to mix them. Crumble the feta over the mixture and season with salt and pepper. Sprinkle basil and mint on top and squeeze some fresh lemon juice over the salad.
