Cucumber and peach salad with herbs
Delight in a refreshing fusion of crunchy cucumbers and juicy peaches with a tantalizing mix of aromatic herbs. A harmonious blend of flavors awaits.
Ingredients:
- 1 shallot, finely chopped
- Kosher salt
- 1 lemon
- 2 Tbsp. Katz’s Sauvignon Blanc vinegar or other white wine vinegar
- 2 lb. mixed heirloom cucumbers, sliced into1/4-inch thick wedges and rounds
- 1 English hothouse cucumber, halved lengthwise, sliced crosswise
- Kosher salt
- 2 lb. yellow peaches, sliced into 3/4-inch thick wedges
- 4 oz. mild feta, crumbled
- Freshly ground black pepper
- Handful of basil leaves, torn if large
- Handful of mint leaves, torn if large
- 1 lemon, halved
Instructions:
- In a small bowl, put the shallot and add a generous amount of salt. Grate the lemon zest finely into the bowl, then cut the lemon in half and squeeze the juice into the mixture. Pour in the vinegar and mix well. Allow it to sit for 10 minutes.In a medium bowl, place the cucumbers and season them with salt. Drizzle half of the dressing over the cucumbers and gently mix to ensure they are well coated.Take a serving bowl or platter and arrange the peaches. Season the peaches with salt and pour the rest of the dressing over them. Gently use your hands to coat the peaches with the vinaigrette.Combine the cucumbers with the peaches, gently toss to mix. Crumble the feta on top, season with salt and pepper. Garnish the salad with basil and mint, then squeeze some lemon juice over it.
