Cucumber and onion salad

Enjoy a refreshing blend of crisp cucumber and zesty onion in this simple and flavorful salad. Perfect for a light and tangy side dish.

Ingredients:

  • Persian cucumbers, thinly sliced
  • small red onion, thinly sliced
  • tsp. kosher salt, plus more
  • cup unseasoned rice vinegar
  • tsp. sugar
  • Freshly ground black pepper
  • Fresh mint leaves (for serving)

Instructions:

  1. Combine cucumbers, onion, and 1 tsp. of salt in a medium bowl. Allow them to sit until the cucumbers start to release their liquid. Press gently on the cucumbers to extract more liquid without damaging them. Take the vegetables out of the bowl, draining off excess liquid, and transfer them to a fresh bowl.
