Crunchy raw beet salad with blood orange, feta and mint

Delight in the refreshing flavors of raw beets, tangy blood orange, creamy feta, and fresh mint in this vibrant and crunchy salad bursting with culinary bliss.

Ingredients:

  • 4 good-sized beets, a mix of purple and gold, if possible
  • 3 blood oranges
  • 1 lemon
  • 1/2 cup good extra-virgin olive oil
  • 230g creamy white feta cheese
  • small bunch of mint leaves, roughly chopped

Instructions:

  1. Clean, peel, and slice beets into thin matchsticks by thinly cutting them about 1/4 inch thick with a knife or mandoline. Then, stack the slices and cut them into matchsticks. Transfer to a bowl.
  2. Peel and remove the pith from blood oranges, slice into thin rounds, and then cut into 1/2 inch strips. Add to the bowl with the beets.
  3. Extract the juice from one lemon and combine with 1/2 cup of high-quality olive oil in a used jam jar. Season with salt and freshly ground pepper. Seal the lid tightly and shake well. Taste the dressing before pouring it over the salad and adjust the seasoning, if necessary.
  4. Drizzle a small amount of the dressing over the beets and blood oranges until the flavors are well-distributed. Mix thoroughly. Crumble feta cheese on top and garnish with mint leaves.
  5. Tip: Peel the beets under running water and chop them on a plastic cutting board that can be easily rinsed to prevent staining. Rubbing coarse salt on your hands and cutting board can help remove any color residue.
