Crunchy, creamy cucumber-avocado salad

Ingredients:
- 2 large cucumbers
- 1 pinch Salt
- 2 ripe avocados
- 1/2 cup chopped mint
- 1/2 lime
- 110g feta cheese, diced
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1 pinch pepper to taste (or lemon pepper)
Instructions:
- Peel the cucumbers, halve them lengthwise, and scoop out the seeds using a teaspoon. Cut the cucumbers into pieces measuring 1/2 inch and place them in a sieve. Sprinkle a generous amount of salt over them and allow them to sit in the sink for 30 minutes to release excess water. This will help prevent your salad from becoming too watery. Rinse quickly and pat dry with paper towels.
- While the cucumbers are draining, dice the avocados into 1/2-inch pieces and place them in a salad bowl. Drizzle them with lime juice and gently toss.
- Rinse and roughly chop the mint leaves. Finely chop the lime zest.
- In a separate bowl, combine 2 tablespoons of olive oil, 2 tablespoons of lime juice, and the chopped lime zest to create the dressing.
- Mix the drained cucumbers, mint, crumbled feta cheese, and dressing with the diced avocados and gently toss together. Season with pepper or lemon pepper to taste. Cover the salad and let it sit in the refrigerator for approximately 30 minutes to allow the flavors to meld together.
- For a more elegant presentation, consider using a ring mold to create decorative domes. Fill the ring mold with the salad mixture, then carefully lift off the mold to reveal a well-structured and visually appealing dish!
