Croque monsieur with caviar and baby watercress salad

Ingredients:

  • 12 slices pullman bread, 1/4-inch thick
  • 170g Gruyere cheese, sliced 1/8-inch thick
  • 340g sliced smoked salmon
  • 1 tablespoon blanched lemon zest
  • 1 tablespoon sliced chives
  • 170g osetra caviar (optional)
  • 8 tablespoons unsalted butter
  • 1/4 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 cup olive oil
  • 3 cups baby watercress salad
  • Fine sea salt
  • Freshly ground pepper

Instructions:

  1. Place the 12 bread slices on the counter. Put Gruyere cheese on 6 slices and smoked salmon on the other 6. Sprinkle lemon zest on the salmon slices and chives on the Gruyere slices. Place 1 ounce of caviar on the salmon slices, then close the sandwiches and butter the outside. Heat a sautepan over medium heat. Place the sandwiches in the pan with the Gruyere side facing down and cook for 2 minutes. Increase the heat to high, flip the sandwiches, and cook for 1 minute on the salmon side. Create a dressing by mixing mustard, lemon juice, and olive oil. Coat the salad with the dressing and season with salt and pepper. To serve, cut the croque monsieurs diagonally twice and arrange them next to the salad on a plate.
