Crispy grilled lamb pitas with radish-watercress salad

Delight in the blend of savory grilled lamb nestled in warm pitas, paired with a zesty radish-watercress salad. A symphony of flavors awaits!

Ingredients:

  • 1/4 cup tahini
  • 1/4 cup water
  • 3 tablespoons fresh lemon juice
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 small garlic clove, grated
  • 450g ground lamb
  • 1/2 cup minced yellow onion 
  • 1/2 cup finely chopped fresh flat-leaf parsley
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons za’atar
  • 1 tablespoon extra-virgin olive oil
  • 1 1/2 teaspoons kosher salt
  • 3/4 teaspoon black pepper
  • 2 large garlic cloves, grated
  • 4 soft white pitas, each split into 2 rounds
  • Salad
  • 5 cups trimmed watercress
  • 1 1/2 cups very thinly sliced radishes (such as watermelon, daikon, or cherry)
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Prepare an outdoor grill (ideally charcoal) to medium-high temperature.
  2. Mix all ingredients in a small bowl using a whisk. Keep aside.
  3. Mix lamb, onion, parsley, mint, za’atar, oil, salt, pepper, and garlic in a medium-sized bowl. Use your hands to combine thoroughly. Spread a thin layer of one-fourth of the lamb mixture over the inner surface of one pita half (using hands is recommended; spread all the way to the edges). Place another pita half on top. Repeat this step with the rest of the lamb mixture and the remaining 3 pitas.
  4. Place the filled pitas on the greased grill grate. Cover and grill until the pitas are crispy and the meat is cooked completely, for about 4 to 5 minutes, flipping once halfway through the cooking time. Cut them into wedges.
  5. In a large bowl, mix watercress and radishes. Drizzle with oil and lemon juice, and sprinkle with salt and pepper. Toss gently to make sure the salad is evenly coated. Serve the salad along with the pitas and the sauce.
