Crispy goat cheese salad
Indulge in the crunchy goodness of a crispy goat cheese salad. A medley of fresh greens topped with warm, golden goat cheese rounds. Delicious!
Ingredients:
- 1 1/2 cups fresh bread crumbs
- Kosher salt and freshly cracked black pepper
- 1/4 cup rosemary infused olive oil, plus 3 teaspoons
- 1 teaspoon chopped fresh thyme leaves, plus 4 sprigs for garnish
- 1 (12-ounce) log fresh goat cheese, sliced into 1/2-inch disks
- 110g baby mixed greens, washed and dried
Instructions:
- Preheat your oven to 190 °C.
- Combine the bread crumbs with salt and pepper in a small bowl. Add 2 to 3 teaspoons of olive oil to moisten the crumbs and mix well using a fork. Spread the mixture on a rimmed baking sheet and bake in the oven until it turns golden and crispy, for about 5 to 7 minutes. Let it cool, then stir in chopped thyme.
- Lightly coat the goat cheese disks with the remaining 1/4 cup of oil and season them with salt and pepper according to your taste. Cover all sides of the cheese with the toasted bread crumbs. Place them on a baking sheet lined with parchment paper or silicone and bake until they are heated through, which will take about 5 minutes.
- Distribute the mixed baby greens evenly among 4 plates. Place the goat cheese rounds carefully on top of each salad, add a sprig of thyme for garnish, and serve.
