Crispy coconut prawn & mango salad

Indulge in the delightful blend of crispy coconut prawns with juicy mango in this refreshing salad. Perfect harmony of flavors awaits!

Ingredients:

  • 160g raw king prawns, peeled
  • 200ml coconut milk
  • 1 large lime, ½ juiced, ½ cut into wedges to serve
  • 2 tsp sesame oil
  • ½ tsp caster sugar or honey
  • 2 large handfuls of watercress or baby spinach (or use a mixture)
  • ½ mango, stoned, peeled and sliced or cut into chunks
  • 1 small avocado, stoned, peeled and sliced
  • ½ small red onion, halved and thinly sliced
  • ½ small bunch of mint, leaves picked
  • 1 large red chilli, deseeded and thinly sliced
  • vegetable oil, for frying
  • 2 tbsp desiccated coconut
  • 2 tbsp cornflour

Instructions:

  1. Use a sharp knife to cut along the back of each prawn and remove the dark line that goes from the head to the tail. Beat the coconut milk until it becomes smooth, then pour half into a bowl with the prawns. Mix in half of the lime juice and a pinch of salt, stir well and let it sit for 15 minutes.
  2. While the prawns are marinating, combine the rest of the coconut milk with the remaining lime juice, sesame oil, a bit of sugar or honey, and a pinch of salt.
  3. Split the watercress or spinach between two plates, then arrange the mango, avocado, red onion slices, mint, and sliced chillies on top.
  4. Heat up a good amount of oil, about 1-2cm deep, in a large saucepan over a medium heat. Mix the desiccated coconut with cornflour and some salt and pepper. Take out the prawns from the marinade and coat them with the cornflour mixture, making sure to shake off any excess.
  5. Test the oil temperature by placing one prawn in it; if it sizzles, add a few more prawns, but do not overcrowd the pan. Fry the prawns for 1-2 minutes on each side until they are crispy and golden, then transfer them to a plate lined with paper towels. Once all the prawns are fried, place them over the salad and drizzle the dressing on top.
