Crispy chickpea salad

Ingredients:
- 1 15-ounce can chickpeas
- 1 tablespoon extra-virgin olive oil

- 2 pita bread rounds, torn
- 2 tablespoons unsalted butter, melted

- 2 cups grape tomatoes, quartered

- 1 cup crumbled feta cheese (about 110g)
- 2 teaspoons za'atar seasoning
Instructions:
- Prepare the chickpeas for roasting: Start by draining, rinsing, and drying the chickpeas thoroughly. Allow them to air dry for approximately 30 minutes on a plate lined with paper towels. Preheat your oven to 180 °C. Spread out the chickpeas on a baking sheet with edges. Coat them evenly with olive oil, salt, and pepper. Roast in the oven, tossing occasionally, until they turn crispy and dry, which should take about 50 minutes. Once done, allow them to cool down.
- While the chickpeas are cooling, work on baking the croutons: Mix the pita bread pieces with melted butter and a pinch of salt on a separate baking sheet. Bake until they turn a golden brown color, usually around 10 minutes. Once ready, let them cool. Both the chickpeas and croutons can be stored separately in airtight containers at room temperature for up to 4 days.
- Prepare the dressing: In a bowl, combine tahini, lemon juice, and 3 to 4 tablespoons of water until you achieve a smooth and pourable consistency. Season with salt and pepper to taste. This dressing can be transferred to a jar and stored in the refrigerator for up to 5 days. If the dressing thickens, simply mix in a little water before serving.
- Assemble the salad: In a large bowl, mix together spinach, tomatoes, cucumber, onion, radishes, and mint. Add feta cheese, za'atar, prepared dressing, and roasted chickpeas. Gently toss all the ingredients together. Finish by topping the salad with the prepared croutons.
