Creole potato salad

Ingredients:
- 1360g red potatoes, scrubbed well and cubed
- 3/4 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 teaspoon sugar
- Salt and freshly ground black pepper
- 1 small Vidalia onion, chopped
- 2 stalks celery, chopped
- 2 cloves garlic, chopped
Instructions:
- Add the diced potatoes into a spacious pot filled with cold water and salt. Heat until boiling. Boil potatoes until they can be easily pierced with a fork. Drain using a strainer and allow them to cool down.
- Combine mayonnaise, mustard, apple cider vinegar, sugar, salt, and pepper in a little bowl.
- After the potatoes have cooled down, transfer them to a big bowl. Mix in chopped onions, celery, and garlic. Drizzle the prepared dressing over the potatoes and stir thoroughly. Add extra salt and pepper to taste, if required.
