Creamy tomato, cucumber & feta pasta salad

Indulge in a flavorful combination of creamy tomatoes, crisp cucumbers, and tangy feta in this delightful pasta salad. Perfect for any occasion!

Ingredients:

  • 3 cups whole-wheat farfalle
  • 1 clove garlic, minced
  • ¼ teaspoon salt
  • ½ cup buttermilk
  • ¼ cup reduced-fat mayonnaise
  • 3 tablespoons chopped fresh dill or 1 tablespoon dried
  • 1 tablespoon distilled white vinegar
  • 2 cups halved cherry tomatoes
  • 1 ½ cups thinly sliced mini cucumbers
  • ½ cup diced fennel
  • ½ cup pitted halved Kalamata olives
  • ½ cup crumbled feta cheese

Instructions:

  1. Start by heating a big pot of water until it boils. Put the pasta in and cook it as instructed on the package. After it's cooked, drain the water, put the pasta in a big bowl, and wait for it to cool down for about 10 minutes.
  2. While the pasta is cooling down, get a medium-sized bowl and place the garlic in it. Sprinkle some salt over the garlic and use a fork to mash it into a paste. Add buttermilk, mayonnaise, dill, and vinegar to the bowl. Mix everything together until it's well combined.
  3. Combine the tomatoes, cucumbers, fennel, olives, and feta cheese with the pasta. Mix everything together well. Pour the dressing over the mixture and make sure everything is evenly coated.
