Creamy tahini salad with spicy roasted chickpeas

Ingredients:
- smoky chickpea croutons
- 2 cups chickpeas, cooked
- 1 tablespoon coconut oil
- 1 teaspoon ground cumin
- 1 pinch cayenne
- 1 pinch sea salt
- creamy roasted garlic & tahini dressing over greens
- 1 piece whole head of garlic
- 2 tablespoons tahini
- 2 tablespoons plain greek yogurt
- 1/4 cup olive oil
- 1/2 teaspoon salt
- 1 bunch mint
- 1 bunch bibb lettuce and or radicchio
- 1 piece fennel
Instructions:
- Pat dry cooked chickpeas to remove any excess moisture. Coat them with oil, spices, and salt before laying them out on a baking sheet. Roast in an oven preheated to 200 °C for 20-30 minutes until they turn golden and slightly crispy. Remember that they will continue to crisp up once out of the oven, so avoid over-baking.
- Start by preheating the oven to 200 °C. Cut a whole garlic head in half along the middle. Wrap the halves in aluminum foil, drizzle with olive oil, and tightly seal the foil. Roast in the oven for about 45 minutes until the garlic cloves are soft and golden. Let them cool a bit, then squeeze the roasted garlic out of the skins. Combine the roasted garlic with tahini, lemon juice, and yogurt in a food processor. Blend until smooth and creamy, gradually adding olive oil while processing. Adjust the dressing's thickness by adding up to a quarter cup of water. Season with salt and pepper to your preference. Note: For a thicker dressing, use a food processor for better results, but you can also whisk the ingredients together by hand if needed.
- Prepare the greens by thinly slicing the fennel using a Japanese mandoline for better results. Wash and chop the bibb lettuce and radicchio. Chop the mint leaves after removing them from the stems. Combine all the greens, toss them with the dressing, and then top with chickpeas and additional freshly ground black pepper.
