Creamy potato salad

Ingredients:

  • 1360g Yukon gold potatoes, cut into 1 1/2-inch chunks
  • 1 cup mayonnaise 
  • 2 tablespoons Dijon mustard 
  • 1 tablespoon sugar 
  • 1/2 teaspoon kosher salt 
  • 1/2 teaspoon freshly ground black pepper 
  • 6 hard-boiled eggs, chopped 
  • 3 scallions, sliced 
  • 2 celery stalks, chopped fine 
  • 2 shallots, chopped fine 
  • 1 lemon, juiced 

Instructions:

  1. Place the potatoes in a big pot and cover them with cold water. Heat until boiling and let them cook until soft, for about 12 to 15 minutes. Then, strain the water and move the potatoes to a large bowl.
  2. In a different bowl, mix together the mayonnaise, mustard, sugar, salt, pepper, eggs, green onions, celery, shallots, and lemon juice. Stir well to combine all ingredients. Pour this mixture over the hot potatoes, stirring until they are well covered. Finally, transfer everything to a serving dish.
