Creamy dijon sweet potato salad

Ingredients:
- 3 Jumbo sweet potatoes, peeled
- 2 tablespoons olive oil
- 1/2 cup green onion, chopped
- 1/4 cup parsley, chopped
- 1/2 cup celery, chopped
- 2/3 cup mayonnaise
- 1/3 cup Dijon mustard
- 1 tablespoon paprika, divided
- 1 teaspoon salt
- 1 teaspoon fresh ground pepper
Instructions:
- Preheat the oven to 400F
- Cut the sweet potatoes, which have been peeled, into 3/4" pieces. Arrange the pieces on 2 baking sheets, then drizzle with olive oil. Season the potatoes with salt, pepper, and half of the paprika. Roast in the oven for 20-30 minutes, or until they are tender and starting to brown
- While the potatoes are roasting, combine mayonnaise, Dijon mustard, parsley, celery, and green onion in a bowl
- Allow the potatoes to cool for 10 minutes
- Toss the sweet potatoes with the dressing mixture. Finish by sprinkling the remaining paprika on top
- Refrigerate for 2 hours or for a maximum of 24 hours
