Ingredients:

- 1/3 cup mayonnaise
- 3 tablespoons sour cream

- 230g dried elbow macaroni
- 1/2 cup frozen corn, thawed
- 1 cup canned black beans, drained and rinsed
- 1 cup shredded rotisserie chicken, skin and bones removed
- 1/4 cup finely chopped red onion
- 2 vine-ripened tomatoes, chopped
- 1/2 jalapeno, stemmed, seeded and minced
Instructions:
- Start by heating a large pot of salted water until it reaches boiling point.Combine cilantro, mayonnaise, sour cream, lime juice, and 1/2 teaspoon of salt in a large bowl and mix well.Once the water is boiling, add the pasta and cook it according to the instructions on the package. When the pasta has 3 minutes left to cook, throw in the corn. Drain the pasta and corn, rinse them under cold water to cool down, and then transfer to the bowl.Mix in the beans, chicken, onions, tomatoes, and jalapeno with the pasta salad in the bowl.
