Creamy baked cauliflower with almond crumbs
Indulge in the delightful flavors of creamy baked cauliflower topped with crunchy almond crumbs. A culinary masterpiece bursting with taste sensations!
Ingredients:
- 1 large cauliflower, outer leaves trimmed
- 4 tbsp rapeseed oil
- 2 onions, very finely chopped
- 3 garlic cloves, crushed
- ½ tsp ground mace
- 4 thyme sprigs, leaves picked from 2, 2 left whole
- 4 tbsp plain flour
- 750ml unsweetened almond milk
- 150ml soya cream
- 1 tbsp wholegrain mustard
- 25g dried breadcrumbs (ensure vegan-friendly, if needed)
- 2 tbsp flaked almonds
- vegan garlic bread and a green salad with a lemony dressing, to serve
Instructions:
- Preheat the oven to 180C/160C fan/gas 4. Trim the cauliflower stalk to make it flat at the base, then make a deep cross incision at the bottom of the stalk. Place the cauliflower on a piece of foil, then coat it with 1 tbsp of oil. Sprinkle 2 tbsp of water, season to taste, and tightly wrap the cauliflower with the foil to seal in the moisture. Put the foil-wrapped cauliflower in a baking dish and bake for 1 hour and 30 minutes.
- In the meantime, sauté the onions in a pan with a pinch of salt and 2 tbsp of oil until they are soft and translucent. Add the garlic, mace, thyme leaves, and flour, and sauté for 2 minutes. Pour in the almond milk, bring it to a simmer while stirring, then season with salt and pepper. Once the sauce slightly thickens, take it off the heat and blend in the soya cream and mustard.
- Mix the breadcrumbs with the remaining oil and incorporate the almonds into the mixture.
- Unwrap the cauliflower and place it back in the baking dish. Pour the prepared sauce all over the cauliflower and into the dish. Sprinkle the breadcrumb mixture on top, and garnish with the two whole sprigs of thyme. Increase the oven temperature to 200C/180C fan/gas 6. Bake for an additional 15-20 minutes until the sauce is bubbling and slightly thickened, and the breadcrumbs and cauliflower turn golden. Slice into wedges and serve with a side of green salad and garlic bread.
