Creamed spinach

Indulge in this creamy and flavorful spinach salad that will tantalize your taste buds with each bite. Perfect for a healthy and delicious meal.

Ingredients:

  • 450g fresh organic spinach, soaked several times in salt water to remove grit, well-rinsed and dried in a salad spinner
  • 110g bacon (about 4 strips)
  • 1/2 cup heavy cream
  • 1/4 cup Parmesan
  • Salt and pepper
  • Freshly ground black pepper

Instructions:

  1. Cook spinach until it is soft and then leave it to cool in a strainer over a bowl to prevent excess water. Steaming helps retain the nutrients, so take care not to overcook it as this will diminish its nutritional value.
  2. Fry bacon until it is crispy in a frying pan, then place it on paper towels to absorb the excess fat and let it cool. Discard most of the fat from the pan, and combine the cream in the same pan over low heat, letting it reduce by about a third.
  3. As the cream reduces, finely chop the now-cooled spinach and put it back in the strainer over a bowl. Cut the bacon slices into small pieces around 1/4 inch in size.
  4. Stir the Parmesan cheese into the thickened cream, and add pepper to taste. As the cheese will provide some saltiness, only add extra salt if necessary. Gently mix the well-drained spinach and bacon into the creamy mixture. Transfer everything to a serving dish.
