Crab salad with paprika-scallion mayonnaise

Ingredients:

  • 1 cup finely chopped Vidalia or other sweet onion
  • 450g jumbo lump crab
  • Kosher salt
  • Freshly ground pepper
  • 1/2 cup peanut oil
  • 1/2 cup ice water
  • 1/3 cup plus 1 tablespoon apple cider vinegar
  • 3/4 cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon sweet paprika
  • 2 tablespoons thinly sliced scallions
  • 1/4 cup coarsely chopped flat-leaf parsley
  • 1/2 small red onion, thinly sliced
  • Buttered toast points or saltines, for serving

Instructions:

  1. Place half of the diced onion in a spacious container. Arrange the crab on top, season with salt and pepper, and layer with the rest of the diced onion. In a compact container, blend the oil with the cold water and 1/3 cup of vinegar. Pour the mixture over the crab, cover, and place in the fridge overnight.
  2. In a moderate-sized bowl, mix together the mayonnaise with the freshly squeezed lemon juice, paprika, and the additional 1 tablespoon of vinegar. Strain the crab and gently mix it into the mayonnaise mixture, incorporating the scallions and parsley. Decorate with sliced red onion and pair with crisp toast slices.
