Crab salad with mango and mint

  • 1 sprig mint, leaves cut fine julienne
  • 1 lemon, juiced
  • 60g olive oil
  • Salt and pepper
  • 1 pint mesclun

Instructions:

  1. Prepare the crab by eliminating any shell fragments. Combine finely chopped mango, radishes, and fresh mint with the crab. Create a dressing by blending lemon juice with olive oil, then add salt and pepper to taste. Toss a portion of the dressing with the crab mixture, reserving the rest to dress the mesclun salad.
