Ingredients:
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 2 tablespoons canned adobo sauce (from chipotle chiles in adobo)
- 2 tablespoons ketchup
- 2 tablespoons fresh lime juice
- Salt and freshly ground black pepper
- 1/3 cup chopped red bell pepper (from about 1/2 bell pepper)
- 1 tablespoon chopped fresh cilantro, plus sprigs for garnish
- 450g cooked Dungeness crab meat, picked
- 4 avocados, peeled, pitted
Instructions:
- Combine the mayonnaise, sour cream, adobo sauce, ketchup, and lime juice in a spacious bowl. Add a pinch of salt and pepper to taste. Gently mix in the bell peppers and finely chopped cilantro. Incorporate the crab meat gently.
- Trim a small portion from the rounded part of the avocados to create a stable base for serving. Arrange the halved avocados with the flat side facing down on a serving dish. Fill each avocado cavity with the crab mixture, distributing evenly. Decorate with a sprig of fresh cilantro. Serve chilled.
