Cowboy fruit salad

Ingredients:
- 1/4 cup sugar
- 1 jalapeno, cut lengthways and seeded
- Zest and juice of 1/2 lime
- 1 cup hulled and halved strawberries
- 1 cup cubed honeydew melon
- 1 cup green seedless grapes, halved lengthwise
- 1 cup red seedless grapes, halved lengthwise
- 1/4 cup fresh mint leaves, chopped
Instructions:
- To make the zesty syrup: Combine the sugar, jalapeno, and 1/2 cup of water in a saucepan. Bring the mixture to a boil, stirring constantly until the sugar is fully dissolved. Lower the heat and let it simmer until the liquid thickens into a syrup-like consistency, approximately 10 minutes. Discard the jalapeno and allow the syrup to cool slightly before mixing in the lime zest and juice.
- To prepare the cowboy fruit salad: Place the strawberries, melon, green grapes, and red grapes in a large bowl. Pour the prepared syrup over the fruits and gently mix everything together. Finish by garnishing with the fresh mint leaves.
