Couscous & fruit salad

Ingredients:

  • 1 14-ounce can reduced-sodium chicken broth, or vegetable broth
  • ¼ cup water
  • 2 teaspoons extra-virgin olive oil
  • 1 cup whole-wheat couscous
  • 1 ½ cups frozen peas
  • 2 tablespoons chopped fresh dill
  • 1 teaspoon freshly grated lemon zest
  • Salt & freshly ground pepper, to taste
  • ½ cup freshly grated Parmesan cheese

Instructions:

  1. In a large saucepan, mix together broth, water, and oil; heat until it boils. Add couscous, then remove from heat. Cover and allow it to sit for 5 minutes.
  2. While waiting, prepare peas on the stove or in the microwave as instructed on the packaging.
  3. Combine the cooked peas, dill, lemon zest, salt, and pepper with the couscous; stir gently with a fork. Serve hot and top with cheese.
