Couscous & fruit salad

Ingredients:
- 1 14-ounce can reduced-sodium chicken broth, or vegetable broth
- ¼ cup water
- 2 teaspoons extra-virgin olive oil
- 1 cup whole-wheat couscous
- 1 ½ cups frozen peas
- 2 tablespoons chopped fresh dill
- 1 teaspoon freshly grated lemon zest
- Salt & freshly ground pepper, to taste
- ½ cup freshly grated Parmesan cheese
Instructions:
- In a large saucepan, mix together broth, water, and oil; heat until it boils. Add couscous, then remove from heat. Cover and allow it to sit for 5 minutes.
- While waiting, prepare peas on the stove or in the microwave as instructed on the packaging.
- Combine the cooked peas, dill, lemon zest, salt, and pepper with the couscous; stir gently with a fork. Serve hot and top with cheese.
