Country style potato salad with pancetta, goat cheese & dried cranberries

Ingredients:
- 910g red bliss potatoes
- 1 tablespoon olive oil
- 170g pancetta, diced
- 1/2 cup finely chopped yellow onion
- 1 tablespoon Dijon mustard
- 2 1/2 tablespoons cider vinegar
- 3/4 cup chicken stock
- 1/2 cup dried cranberries
- 2 tablespoons chopped parsley plus extra for garnish
- Kosher salt
- Freshly ground black pepper
- 60g goat cheese
Instructions:
- Begin by rinsing the potatoes and cutting them in half. Put them in a large pot and cover with enough cold water. Season with salt and bring to a boil. Cook until the potatoes are easily pierced with a fork. Drain them and cut into 1/4-inch slices.
- In a large skillet, warm the olive oil over medium heat. Cook the pancetta until it becomes crispy. Next, add the onion and sauté until it becomes translucent. Mix in mustard, vinegar, chicken broth, and dried cranberries. Let it simmer for 3-4 minutes until the liquid reduces by half. Add the sliced potatoes, parsley, and season with salt and pepper. Mix everything together well.
- When ready to serve, arrange the potatoes on a serving dish and sprinkle crumbled goat cheese on top. Decorate with the remaining parsley. Serve the dish while it's still warm.
