Cottage cheese and radish salad

Delight in the crispness of radishes paired with creamy cottage cheese in this refreshing summer salad. Perfect for a light and satisfying meal.

Ingredients:

  • 450g 2% cottage cheese
  • 4 radishes
  • 1 shallot
  • 1 teaspoon black pepper
  • 1 tablespoon celery seed
  • 1 tablespoon salt
  • 1/4 cup minced parsley

Instructions:

  1. Cut off the ends of radishes and put them in the food processor bowl. Pulse a few times, about 3 or 4 times. Next, add shallot and pulse again 3 or 4 times.Combine radish, shallot, and cottage cheese in a medium-sized bowl. Season with salt, pepper, and celery seed.Refrigerate overnight. Before serving, stir in chopped parsley.
