Corn salad

Ingredients:

  • 6 ears corn
  • Olive oil, for brushing
  • Kosher salt and freshly ground black pepper
  • 3 Roma tomatoes, diced
  • 3 green onions, sliced 
  • 1 red bell pepper, diced 
  • 1 jalapeno, sliced thinly 
  • 3 tablespoons olive oil 
  • Juice of 3 limes 
  • Kosher salt and freshly ground black pepper
  • 3/4 cup fresh cilantro leaves, roughly chopped

Instructions:

  1. To start with the corn: Get the grill ready for medium-high heat.
  2. Coat the corn with olive oil and season with salt and pepper. Grill until it's cooked and has a golden brown color, usually for about 10 minutes. Let it cool off.
  3. Now, moving on to the salad: Combine the tomatoes, onions, bell pepper, and jalapeno in a bowl. Drizzle the olive oil and lime juice over them, add a touch of salt and pepper, then mix everything together.
  4. Remove the corn kernels from the cobs, leaving some in bigger pieces, and carefully mix them with the salad, making sure to keep the larger pieces whole. Sprinkle the cilantro leaves on top and gently blend everything together.
