Corn and vidalia onion salad

Delight in the freshest flavors with our corn and Vidalia onion salad. A perfect blend of sweet and savory, a true culinary masterpiece.

Ingredients:

  • 4 ears fresh corn, shucked
  • Cooking spray, for coating the grill
  • 1 large Vidalia onion, cut into 1/2-inch slices 
  • 1 1/4 cups finely chopped fresh cilantro 
  • 1 1/4 cups chopped seeded yellow tomato 
  • 3 tablespoons rice vinegar 
  • 1/2 teaspoon kosher salt 
  • 1/2 teaspoon freshly ground black pepper 
  • 1/2 teaspoon red pepper flakes 

Instructions:

  1. Get your charcoal or gas grill ready for medium-high heat, or heat up the broiler.
  2. Place the corn on the grill or on a broiler pan. Cook, flipping every 5 minutes, until it's lightly browned all around, which should take about 20 minutes. Allow it to cool down, then remove the kernels from the cobs (you should end up with around 3 cups).
  3. Spray cooking spray on the grill or broiler pan. Grill the onion slices for around 5 minutes on each side.
  4. Mix together the corn, grilled onions, cilantro, tomatoes, vinegar, salt, pepper, and red pepper flakes in a big bowl. Stir well and serve.
