Composed summer salad

Delight in a vibrant summer salad that harmoniously blends fresh seasonal produce for a burst of flavors and textures. Perfect for al fresco dining!

Ingredients:

  • 280g green beans, trimmed
  • Kosher salt and freshly ground pepper
  • 1/4 cup parsley leaves, chopped
  • 1 tablespoon capers, chopped
  • 2 tablespoons lemon juice
  • 2 tablespoons walnut or olive oil
  • 1 bunch arugula, washed and stems trimmed
  • 1 medium, ripe avocado
  • 2 (5-ounce) cans tuna in olive oil

Instructions:

  1. Bring a medium saucepan of water to a boil over high heat, filling it up to 2 inches deep. Place green beans in a steamer basket and put it in the saucepan. Cover it and steam the beans until they are soft, which should take around 8 minutes.
  2. Mix parsley, capers, lemon juice, and oil in a small bowl. Add salt and pepper to taste.
  3. Place arugula, avocado, tuna, and beans on plates; drizzle the dressing on top.
