Composed summer salad
Delight in a vibrant summer salad that harmoniously blends fresh seasonal produce for a burst of flavors and textures. Perfect for al fresco dining!
Ingredients:
- 280g green beans, trimmed
- Kosher salt and freshly ground pepper
- 1/4 cup parsley leaves, chopped
- 1 tablespoon capers, chopped
- 2 tablespoons lemon juice
- 2 tablespoons walnut or olive oil
- 1 bunch arugula, washed and stems trimmed
- 1 medium, ripe avocado
- 2 (5-ounce) cans tuna in olive oil
Instructions:
- Bring a medium saucepan of water to a boil over high heat, filling it up to 2 inches deep. Place green beans in a steamer basket and put it in the saucepan. Cover it and steam the beans until they are soft, which should take around 8 minutes.
- Mix parsley, capers, lemon juice, and oil in a small bowl. Add salt and pepper to taste.
- Place arugula, avocado, tuna, and beans on plates; drizzle the dressing on top.
