Ingredients:
- 5 ears of corn
- 1/2 red pepper diced
- 1/2 green pepper diced
- 1/2 yellow pepper diced
- 1/2 orange pepper diced
- 1/2 english cucumber unpeeled diced
- 1/2 red onion diced
- 4 scallions diced
- 2 tomatoes diced
- 1/4 cup parsley chopped
- 1/4 cup cilantro chopped
- 1 lime zested
- 1/4 cup freshly squeezed lime juice
- 1/4 cup rice vinegar
- 1/4 cup extra virgin olive oil
- 2 teaspoons cumin
- 2 teaspoons kosher salt
Instructions:
- Boil the corn for 2-3 minutes or use the microwave for the same amount of time. Remove the kernels from the cob and transfer them to a big mixing bowl. Combine the diced vegetables, along with cilantro and parsley.
