Collard green wraps with curry chicken salad
Delicious collard green wraps filled with flavorful curry chicken salad. A perfect blend of spices and fresh greens for a tasty and healthy meal.
Ingredients:
- 2 cups diced, cooked chicken
- 1/2 cup mayonnaise
- 2 tablespoons hot, madras curry powder
- 1/4 cup raisins
- 1/3 cup chopped raw cashews
- 1 tablespoon lemon juice
- 1 teaspoon dijon mustard
- pinch of salt
- 4 large, whole-grain tortillas
- 8 collard green leaves
Instructions:
- Mix chicken, curry powder, mayo, lemon juice, dijon mustard, and a pinch of salt in a bowl. Stir together, then add the raisins and cashews. Taste and adjust seasoning as needed.
- Prepare collard greens by washing and drying the leaves. Trim the stem at the base of each leaf, then carefully remove the tough center stem using a sharp knife. Boil a pot of salted water, add the leaves, cook briefly, then remove them with tongs. Rinse in cold water and pat dry before using for wraps.
- Create the wraps by laying a tortilla flat on a clean surface, layering 2 prepared collard leaves, and placing about 1/2 cup of chicken salad near the edge. Fold the bottom of the tortilla up, fold the sides in, then roll tightly. Position the wrap seam side down on a serving dish. Cut the wraps diagonally and arrange them on the platter before serving.
