Collard green wrap with white bean salad
Try this refreshing collard green wrap filled with flavorful white bean salad. A culinary delight bursting with fresh taste and healthy goodness.
Ingredients:
- 1 15 oz can cannellini beans, drained and rinsed
- 2 stalks of celery, finely chopped
- 1 tablespoon Dijon mustard
- zest of 1 organic lemon
- juice of half of lemon
- 1 tablespoon chopped Italian parsley
- 3 tablespoons extra virgin olive oil
- salt and pepper
- 3 collard greens
Instructions:
- Place white beans in a bowl and lightly crush them using a fork (they do not need to be completely mashed).Combine diced celery with the white beans.In a small bowl, mix Dijon mustard, lemon zest, lemon juice, parsley, and olive oil until smooth.Pour the dressing over the beans and celery, season with salt and pepper according to your preference, and gently stir until well mixed.Trim the stem end of the Collard green leaf and spread 1/3 of the white bean salad or mock tuna salad along the center of the leaf (lengthwise).Roll up the leaf and cut into 3 equal sections.For added color, include some chopped or shredded carrots in the wrap.
