Cold cucumber salad

Ingredients:

  • 1 teaspoon salt
  • 1 cup white vinegar 
  • 1 1/2 cups sugar 
  • 1 teaspoon celery seed 
  • 1/4 cup vegetable oil 
  • 5 cups cucumber slices (about 3 Persian or Kirby cucumbers; see Cook's Note) 
  • 1 medium sweet onion, thinly sliced into rings 
  • 1 large yellow bell pepper, thinly sliced 

Instructions:

  1. Heat up the salt, vinegar, sugar, celery seed and vegetable oil in a medium saucepan until boiling, then take it off the stove and let it cool down.
  2. Combine the sliced cucumbers, onions, and peppers in a big bowl with the liquid mixture and chill in the refrigerator for at least 2 hours or overnight. Serve chilled.
