Colcannon (irish potato salad)

Ingredients:

  • 5 russet potatoes
  • 1/2 cup unsalted butter
  • 1/4 cup whole milk
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 4 large shallots, thinly sliced
  • 1 large leek-halved and thinly sliced
  • 1 bunch kale, stemmed and coarsely chopped
  • 1 head napa cabbage, cored and coarsely chopped
  • 1/4 teaspoon freshly grated nutmeg
  • 1/4 teaspoons salt
  • 2/3 cups chopped green onion tops

Instructions:

  1. Cut the potatoes into pieces and cook by steaming until they are soft. Put them back in the hot pot and mix in 1/4 cup of butter, milk, kosher salt, and 1/4 teaspoon of pepper. Combine them by mashing. Heat the rest of the butter in a large pot on medium heat. Add shallots and leeks. Cook until they start to become tender. Then, add the kale and cook until it becomes soft and slightly wilted, while still looking vibrant for about 3 minutes. Mix in the cabbage and cook until it is tender yet slightly crispy, around 8 minutes. Sprinkle some nutmeg, salt, and the remaining pepper on top. Thoroughly mix the cabbage with the mashed potatoes. Before serving, garnish with slices of green onion.
