Cobb salad with grains

Ingredients:
- ounces bacon (about 6 slices), cut into 1-inch pieces (optional)
- /4 cup fresh lemon juice
- tablespoons minced shallot (about 1/2 medium shallot)
- tablespoon red wine vinegar
- teaspoon Dijon mustard
- small garlic clove, minced
- /4 teaspoon honey
- /2 cup extra-virgin olive oil
- Kosher salt and freshly ground black pepper
- cups watercress sprigs with tender stems
- cups mixed cooked grains (such as quinoa, semi-pearled farro, or wild rice), cooled
- hard-boiled eggs, peeled, quartered
- ripe avocado, halved, pitted, peeled, cut into 1/2-inch pieces
- tomato, preferably heirloom or vine ripened, cut into 1/2-inch wedges
- /4 cup crumbled fresh hard cheese (such as Cotija or ricotta salata)
- tablespoons 1-inch pieces fresh chives
Instructions:
- Fry bacon in a big frying pan on medium-high temperature until it's crispy and most of the grease is released, for about 7 to 8 minutes. Remove the bacon using a slotted spoon and place it on a plate lined with paper towels.
- Combine lemon juice, shallot, vinegar, Dijon mustard, garlic, and honey in a small bowl. Slowly mix in oil. Season the dressing with salt and pepper to your preference.
- On a large serving dish, lay out watercress. Top it with the cooked bacon, grains, boiled eggs, sliced avocado, tomato, cheese, and chopped chives. Drizzle the prepared dressing over the salad.
