Cobb salad
Indulge in the classic flavors and textures of a delicious Cobb salad, featuring fresh greens, tender grilled chicken, crisp bacon, creamy avocado, tangy blue cheese, and a zesty vinaigrette dressing.
Ingredients:
- 3 slices bacon, cut in half
- 1 ripe avocado, split, pitted and diced
- 2 ripe tomatoes, diced
- 2 hard-cooked eggs, chopped
- Kosher salt and freshly ground black pepper
- 8 cups mesclun greens
- 2 cups shredded cooked chicken
- 1/2 cup Blue Cheese Dressing, homemade, recipe follows
- 1 cup mayonnaise
- 1/2 cup crumbled Maytag or other blue cheese (about 90g)
- 1/2 cup half-and-half
- 2 tablespoons sour cream
- 1 tablespoon freshly squeezed lemon juice
- 1/4 teaspoon Worcestershire sauce
- Kosher salt and freshly ground black pepper
Instructions:
- Place the bacon on a paper towel on a microwave-safe plate. Add another paper towel on top, microwave on high until the bacon is crispy, around 3 to 4 minutes. Let it cool down.
- In a large salad bowl, arrange the avocado, tomato, and eggs in layers. Season each layer with salt and pepper. Add the mesclun greens, then sprinkle the chicken on the top. Crumble the bacon over the salad. Bring the salad to the table and mix everything evenly with the dressing. Serve.
- Combine mayonnaise, 1/4 cup of blue cheese, half-and-half, sour cream, lemon juice, Worcestershire sauce, and 1/2 teaspoon salt in a medium bowl. Whisk until the mixture is smooth. Gently fold in the remaining 1/4 cup of blue cheese. Season with pepper. Use immediately or store in the fridge for up to 3 days.
