Classic potato salad
Enjoy a flavorful twist on a classic potato salad incorporating creamy potatoes, tangy pickles, savory onions, and a blend of traditional herbs and spices.
Ingredients:
- 1360g red potatoes
- Kosher salt
- 6 large eggs
- 1 cup mayonnaise
- 2 tablespoons yellow mustard
- 2 stalks celery, chopped
- 3 tablespoons chopped fresh parsley
- 2 fresh chives, chopped
- 1 white onion, finely chopped
- Freshly ground pepper
Instructions:
- Start by boiling the potatoes with 2 heaping tablespoons of salt in a large pot of water. Boil until the potatoes are soft when pierced with a fork, which should take around 10 to 15 minutes. Once done, drain the water and cut the potatoes into 1/2-inch pieces.
- While the potatoes are cooking, place the eggs in a large saucepan and cover them with water. Bring the water to a boil, then lower the heat to a simmer. Let the eggs cook for about 10 minutes until they're hard-boiled. Once done, drain the hot water and rinse the eggs under cold water until they're cool enough to handle. Peel the eggs and chop them into small pieces.
- In a large bowl, mix together the cooked potatoes, mayonnaise, mustard, celery, parsley, chives, onion, and a pinch of salt and pepper. Make sure all the potatoes are well coated with the dressing before adding the chopped hard-boiled eggs. Gently combine all the ingredients together to make the potato salad, being careful not to break the eggs.
