Classic niçoise salad

Delight in the harmony of flavors with this classic Niçoise salad recipe. Fresh veggies, briny olives, and tuna combine for a savory delight.

Ingredients:

  • 110g small red or white potatoes (about 4), scrubbed and halved
  • ½ cup Easy Anchovy Vinaigrette (see Associated Recipe)
  • 110g fresh green beans (1 cup), trimmed
  • ¾ cup rinsed canned chickpeas
  • 1 cup cherry or grape tomatoes, halved
  • 2 ½ ounces water-packed light tuna, drained
  • 2 hard-boiled eggs, quartered
  • Chopped fresh parsley for garnish

Instructions:

  1. Fill a large saucepan with 1 inch of water and bring it to a boil. Place a steamer basket in the saucepan. Place the potatoes in the basket, cover it, and steam them until they are soft, which should take around 10 to 12 minutes. Once ready, transfer the potatoes to a medium-sized bowl. Add the vinaigrette and gently mix it with the potatoes using a spatula. Let the potatoes sit in the dressing for a minute or two. Using a slotted spoon, move the potatoes to a serving platter or distribute them between two plates.Next, add the green beans to the steamer basket, cover it, and steam them until they are tender but still slightly crispy. This should take about 4 to 6 minutes. After steaming, run the green beans under cold water to cool them down and stop the cooking process.To assemble the salad, arrange the green beans, chickpeas, tomatoes, tuna, and eggs on the serving platter or plates. Pour the remaining dressing over the salad from the bowl. If desired, sprinkle some parsley on top for garnish.
