Classic cobb salad
Indulge in a delightful mix of crisp lettuce, juicy tomatoes, creamy avocados, crispy bacon, tangy blue cheese, and tender grilled chicken in this classic Cobb salad.
Ingredients:
- 6 slices prosciutto, chopped
- 4 cups mixed greens (romaine hearts and baby greens)
- 2 cooked chicken breasts, cubed or sliced
- 3 hard-boiled eggs, peeled and chopped
- 1 avocado, peeled, pitted and chopped
- 1 cup cherry tomatoes, halved
- 1 cup crumbled feta
- juice of 1 lemon
- 2 to 3 tablespoons red wine vinegar
- 1 teaspoon Dijon
- 1/4 cup olive oil
- 1/2 teaspoon each sea salt and cracked black pepper
Instructions:
- Heat a large pan over medium heat. Cook prosciutto, stirring occasionally, until it turns crispy, about 8-10 minutes. Place it on a plate lined with a paper towel to cool down while you prepare the other ingredients.
- While the prosciutto is cooking, create the dressing. Whisk together lemon juice, vinegar, Dijon mustard, olive oil, salt, and pepper in a medium bowl until well combined. Taste the dressing and adjust the seasonings as needed. Keep it in the refrigerator until you are ready to use it.
- To put the salad together, arrange baby greens and romaine hearts on a platter or in a shallow bowl. Place the crispy prosciutto, chicken, hard-boiled eggs, tomatoes, avocado, and feta in separate rows on top of the greens. Drizzle the salad with the prepared dressing and season with salt and pepper.
