Classic caesar salad

Indulge in the flavors of a classic Caesar salad. Crisp romaine lettuce, garlicky croutons, tangy Parmesan cheese, and creamy Caesar dressing create the perfect harmony of taste and texture.

Ingredients:

  • 1 large clove garlic
  • 3 anchovies (I prefer white), plus more for serving
  • 1/2 teaspoon kosher salt
  • 2 large egg yolks
  • Juice of 2 lemons
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup olive oil
  • 1/4 cup freshly grated Parmesan, plus shaved for serving
  • 10 turns freshly cracked black pepper
  • 3 romaine hearts, leaves separated

Instructions:

  1. Place the garlic on the tines of a fork. Use the garlic to rub all areas inside the large bowl that you will utilize for preparing your dressing, ensuring everything is well coated. Keep the garlic clove aside for later use.
  2. Combine the anchovies and salt in the large bowl, then smash them into a paste using the fork. Mix in the egg yolks, lemon juice, mustard, and Worcestershire sauce, and vigorously stir with the fork. Slowly pour in the olive oil while whisking. Incorporate the Parmesan cheese and pepper.
  3. Toss the romaine lettuce leaves in the dressing until they are well coated. Distribute the lettuce among 4 plates, then decorate with thinly shaved Parmesan and extra anchovies.
