Claire's mixed green salad with feta vinaigrette
Indulge in the refreshing flavors of mixed greens topped with tangy feta vinaigrette. A delightful blend of freshness and zest awaits in every bite.
Ingredients:
- 3 tablespoons sunflower oil, or canola oil
- 3 tablespoons extra-virgin olive oil, preferably mild-flavored
- ¼ cup finely crumbled feta cheese
- 1 tablespoon cider vinegar
- 1 tablespoon red-wine vinegar
- 2 teaspoons lemon juice, or to taste
- 1 teaspoon freshly ground pepper, or to taste
- ¼ teaspoon salt, or to taste
- 8 cups lightly packed mixed salad greens, or arugula, any tough stems removed
- 2 cups sliced cucumbers
- 1 ½ cups cherry tomatoes, halved
- 5 radishes, thinly sliced
- ¼ cup very thinly sliced red onion
Instructions:
- For making the vinaigrette: Combine sunflower (or canola) oil, olive oil, feta cheese, cider vinegar, red-wine vinegar, freshly squeezed lemon juice, black pepper, and salt in a blender. Blend until a smooth consistency is achieved. Taste and make adjustments by adding more lemon juice, salt, or pepper as needed.
- For preparing the salad: In a spacious bowl, mix greens (or arugula) with half of the vinaigrette. Transfer the greens to a large serving platter. Arrange cucumbers, tomatoes, radishes, and sliced onion on top of the greens. Drizzle the remaining vinaigrette on the salad before serving.
