Citrusy fruit salad in ginger lime syrup

Ingredients:
- 1 grapefruit
- 2 blood oranges
- 3 clementines
- 1 persimmon
- 1 red pear
- 1 Asian pear
- 1 pomegranate (about 1 cup seeds)
- 1 to 2 tablespoons finely chopped fresh mint
- Hemp seeds, for garnish (optional)
- 1/4 cup maple syrup, grade A
- 1 tablespoon water
- 1 (3-inch) piece of fresh ginger, peeled and sliced
- 2 tablespoons freshly squeezed lime juice
Instructions:
- To prepare the citrus segments, start by cutting off the top and bottom of each fruit. Remove all the skin and white pith, then carefully cut between the membranes to release each wedge of fruit. Place the citrus segments in a large mixing bowl along with any juices. Next, thinly slice the persimmon, red and Asian pears, and add them to the bowl. Deseed the pomegranate and keep the seeds for later use.
- For the syrup, combine maple syrup and water in a small saucepan placed over medium heat. Add ginger, bring the mixture to a simmer, then turn off the heat and allow the ginger to infuse for at least 15 minutes. Stir in lime juice, remove the pieces of ginger, and drizzle the cooled syrup over the prepared fruit. Gently mix everything together to coat the fruit. Finally, top the dish with hemp seeds, mint leaves, and pomegranate seeds for garnish.
